Zucchini Loaf

Growing up with an Italian mom, this was the “banana bread” of my childhood. This loaf is delicious and moist and good for sneaking some green foods into your kid’s diet without them knowing. 😉



3 cups all purpose flour
3 eggs
2 cups sugar
1 cup olive, canola or light vegetable oil (coconut oil would work too)
1 tsp vanilla
2 cups grated zucchini
1 cup chopped walnuts, raisins or chocolate chips
1 tsp cinnamon
1 tsp salt
1 tsp baking soda
1 tsp baking powder
1/2 cup sour cream


Preheat oven to 350 degrees. Grease two standard size loaf pans.

Sift flour into large bowl and add the rest of the dry ingredients. Mix until combined. Beat eggs lightly in a second bowl. Add vanilla, oil, sour cream and combine well. Stir wet ingredients into flour mixture and combine well, scraping the bottom of the bowl well. Stir in zucchini, nuts, raisings and/or chocolate chips.

Divide batter evenly into loaf pans and bake 1 hour, 15 mins or until toothpick inserted into centre of the loaf comes out clean. Cool, slice, butter and mmmm.
