S’more Love Cupcakes

These s’more inspired cupcakes are still one of my favourites – they were one of the first ones I came up with when I began my cupcake journey and I still love them! These are always a hit with kids (and those who are still kids at heart ; )

Once cooled, top with the marshmallow buttercream below, sprinkle with the graham crunch topping and adorn each cupcake with a square of your favourite milk chocolate.

These little beauties will warm up any campfire! ; )

Marshmallow Buttercream

1 cup butter at room temperature
2 cups icing sugar
1/2 tsp. pure vanilla extract
1 oz. tub of marshmallow cream
dash of salt

Cream butter until fluffy. Add icing sugar and salt. Beat in vanilla. Add marshmallow cream and beat until just combined.

Graham Crunch Topping

1/2 cup graham cracker crumbs
1/4 cup brown sugar
1/8 tsp cinnamon
2 tbsp. melted butter
1 tsp vanilla
2 tbsp. white sugar
dash of salt

Preheat oven to 350.

Mix dry ingredients and add melted butter. Spread into bottom of a small, buttered baking dish and bake for 15 mins. This recipe makes quite a bit – so you can cut the recipe in half and / or use the excess to top ice cream!
